Grapes are hand selected and picked in the morning, as cold as possible and gently crushed. Fermentation is carried out in small temperature controlled stainless steel open fermenters. Maceration lasts for about 12 - 14 days.
This is followed by malolactic fermentation and once completed, by oak maturation in French and American oak classic barriques for over 30 months, as tradition in the Brunello Wine Region in Italy wants

Ideal accompaniment to roast, red meats and game. To fully enjoy the flavors of this wine, let it breathe for at least 1 hour before drinking - better if decanter is used.
