vinification
Grapes are hand selected and picked in the morning, as cold as possible and gently crushed. Fermentation is carried out in small temperature controlled stainless steel open fermenters.
Maceration lasts for about 12 - 14 days. This is followed by malo-lactic fermentation and once completed, by oak maturation in French and American oak classic barriques for over 30 months, as tradition in the best Shiraz Regions require.
