Description

Cabernet Sauvignon

The 2011 Margaret River season provided the first opportunity to introduce 9th Chamber’s inaugural Cabernet Sauvignon - our pinnacle Cabernet.

2011 Vintage Awarded Cabernet Sauvignon of the Year

The inaugural 2011 Devil\'s Lair 9th Chamber Cabernet Sauvignon was awarded Cabernet Sauvignon of the Year and the equal-highest Cabernet Sauvignon rating of 98 points in the 2016 James Halliday Australian Wine Companion, reflecting the significant evolution of Cabernet winemaking at Devil\'s Lair and a consolidated approach to this classic Margaret River variety.

Campbell Mattinson, Wine Reviewer for the Australian Wine Companion, awarded the wine 98 points describing it as:

\"Cabernet reaching for the stratosphere and placing its fingertips fairly in the vicinity. This takes the flesh and bone of Devil\'s Lair cabernet and adds muscle, of the rippling type. Blackcurrant, black olive, truffle, sweetly spiced oak, peppercorn and brighter, almost pretty, redcurrant notes. There\'s a dusting of chocolate too; the flavours here flex and contract, relax and unveil, in waves. Gravelly tannin maintains a firm rule. Persistence: it looks tomorrow in the eye.\"

Grape Variety
Cabernet Sauvignon
Maturation
This wine was small batch fermented over ten days and left on skins for a further 3 weeks. The wine was pressed and racked into 70% new and 30% older seasoned French oak. Wine was matured for 17 months and then bottled.
Colour
Dense purple with garnet hues.
Nose
Classically modern Margaret River Cabernet. Violets, pastels and cassis aromas with a regional hint of dried bay leaf.
Palate
An elegant and richly textured palate of dark cherries, crème and spice. Supple and layered with a focussed and lingering delicious aftertaste.
