A beautiful expression of Shiraz grown in the warm Swan Valley climate on the laterite ironstone gravel soil found along the base of the Darling Scarp. Crafted from fruit grown on our vineyard and the Millard, Sitta & Nielson vineyards in the Swan Vallley. The fruit was handpicked on 7 February and crushed into an open fermenter. The lightest juice was drained off to concentrate the colour, flavour and tannins prior to inoculation. It was fermented on skins for 10 days prior to ageing in a mix of American and
French oak for 10 months to add a further depth of richness.
This intensely flavoured wine is powerful now and will mature and soften in the bottle for at least ten years.
“From three Swan Valley vineyards; the saignee method was used to run off part of the juice prior to fermentation, concentrating colour, flavour and tannins (not alcohol); matured in American and French oak. Dense purple crimson; the wine does have exceptional concentration, but avoids the trap of excess tannins.
